ROAST LEVEL DESCRIPTIONS:
City Level - Medium brown in color. The acidity profile is at a peak, and the body of the cup is more in balance. Bean surface is non-oily, and flavor nuances are best noted at this level. Most varieties are done just before 2nd crack of the beans.
Full City level - Rich brown in color. The acidity is slightly decreased and body is more pronounced. Roast is done during 2nd crack of the beans. From this level to a Vienna is ideal for an Espresso level.
Vienna level - Deep brown in color. The beans have a sheen of oil on the surface. Subtle nuances are diminished, and flavor balance tilts to more "roasted" notes. Body or "mouth feel" has increased.
French level - Brown / Black in color. Surface of the beans are glossy as the oil from the bean has been brought to the surface. All subtle nuances of the bean variety are history, and a smoky aroma / flavor prevails.

Our fresh roasted Gourmet coffee is packaged in gold foil type bags that are heat sealed air tight along with a one way de-gasing valve to optimize freshness by releasing the CO2 out of the bag without air getting back in. Since this is so important, we package and seal our roasted coffee only minutes from the roaster, locking in MAXIMUM aromatics. According to our freshness testing, storing unopened bags of roasted coffee in refrigeration is the best method of prolonging freshness.
